After nearly a year of redefining Quezon City’s after-dark scene, Quezon Club at Solaire Resort Quezon City is entering a new chapter with a refreshed culinary direction that brings Filipino ingredients and techniques to its Western-inspired menu.
Leading the transformation is Chef January “Janu” Belardo, Solaire Resort Quezon City’s youngest and first female Chef de Cuisine. Building on the restaurant’s previous focus on European and American cuisines, Chef Janu now incorporates Filipino produce and traditional techniques into inventive mains and bar bites.
“Instead of focusing solely on Western or American cuisine, we’ve infused Filipino influences, not by replicating traditional dishes, but by highlighting local produce and applying techniques like fermentation, preserves, pickling, and marination,” she said. “From vinegars and sauces to doughs, everything is made inhouse.”
Her kitchen serves as both a laboratory and creative space, with fermenting chilis, fruits, rice, and vegetables alongside garlic-infused oils, coconut vinegar, pinakurat, calamansi, panutsa, and atsara.
These ingredients find their way into dishes such as Grilled Octopus, enhanced with spicy buro, while bar bites reinterpret familiar Filipino flavors with a refined approach. Oysters take inspiration from isaw and are paired with Chef Janu’s signature SAUCE MARIA!, while elevated grilled pork barbecue and kinilaw-style creations bring street-food influences to the table.
Desserts also receive a Filipino touch, with asin tibuok grated over the Burnt Basque Cheesecake for a savory finish.
Designed with social dining in mind, the new mains and the Grand Seafood Tower are made for sharing, encouraging guests to gather over inventive plates while enjoying Quezon Club’s lineup of music, dance, comedy, and live performances.
