The MICHELIN Guide Manila and Environs & Cebu 2027 has unveiled its second restaurant selection, recognizing 127 dining establishments across the Philippines. Announced at the MICHELIN Guide Restaurant Ceremony at Manila Marriott Hotel, Newport World Resorts, this year’s edition features one Two MICHELIN Star restaurant, nine One MICHELIN Star establishments, 31 Bib Gourmand restaurants, and 86 MICHELIN-Selected venues.
A highlight of the new selection is FLOW in Makati, which earns its first MICHELIN Star. All previously awarded MICHELIN-Starred restaurants also successfully retained their distinctions, reflecting the consistency and continued development of the country’s dining scene.
The selection includes one Two MICHELIN Star restaurant, nine One MICHELIN Star establishments (including one new entry), 31 Bib Gourmand restaurants (eight new and two promoted), and 86 MICHELIN-Selected restaurants (18 new additions). Four Special Awards were also presented, including the first-ever MICHELIN Opening of the Year Award in the Philippines.
Filipino Cuisine Takes Center Stage
For this second edition, MICHELIN Inspectors observed a dining landscape growing in confidence, diversity, and culinary identity. Across Manila, Cebu, Pampanga, and Cavite, chefs are drawing inspiration from local ingredients, regional traditions, and Filipino heritage while introducing fresh perspectives to their craft.
Filipino cuisine emerged as a defining strength of the selection, accounting for nearly 60% of newly selected establishments. The trend reflects a growing appreciation for the country’s culinary culture and the creativity of a new generation of Filipino chefs.
“The Philippines continues to impress with the way its culinary scene is evolving while remaining deeply connected to its roots,” said Gwendal Poullennec, International Director of the MICHELIN Guide. He noted that chefs are increasingly showcasing local ingredients, traditions, and regional flavors through distinctive approaches and creative techniques.
FLOW Joins The MICHELIN-Starred Restaurants
Helm in Makati retains its Two MICHELIN Stars, reaffirming its position among the country’s leading fine-dining destinations. Led by Chef Josh Boutwood, the restaurant draws on his half-British, half-Filipino heritage and Spanish influences through creative seasonal menus characterized by precision, bold flavors, and meticulous presentation.
Joining the One MICHELIN Star selection is FLOW in Makati, led by Chef Kevin Jonathan Uy. Its carefully crafted dishes, thoughtful techniques, and clear culinary direction impressed inspectors with cooking of notable quality. The restaurant also reflects the growing ambition of the Philippine dining scene while remaining connected to local ingredients and flavors.
Eight other restaurants successfully retained their One MICHELIN Star distinctions: Asador Alfonso in Cavite; Celera, Hapag, Inatô, Kása Palma, and Toyo Eatery in Makati; Gallery by Chele in Taguig; and Linamnam in Parañaque.
Together, these establishments demonstrate the diversity and consistency of the country’s top dining destinations.
Bib Gourmand And MICHELIN-Selected Restaurants Expand The Dining Landscape
The 2027 MICHELIN Bib Gourmand selection recognizes 31 establishments, including eight new additions and two promotions. The distinction highlights restaurants offering high-quality food at moderate prices, covering traditional Filipino favorites, regional specialties, and contemporary dining concepts.
Meanwhile, the MICHELIN-Selected category now features 86 restaurants, with 18 new establishments joining the list. From neighborhood favorites and family-run institutions to ambitious chef-led concepts, the selection reflects the growing range of cuisines, dining styles, and price points available across the country.
Special Awards Celebrate Filipino Hospitality Talent
Beyond restaurant distinctions, the MICHELIN Special Awards recognize individuals whose expertise and dedication contribute to memorable dining experiences. This year’s ceremony presented four awards, including the Philippines’ first MICHELIN Opening of the Year Award.
The recipients are:
- MICHELIN Opening of the Year Award – Chef Frances Tariga, Tadhanà (Makati): Recognized for bringing an international perspective to a personal reinterpretation of Filipino cuisine through refined techniques and creative presentation.
- MICHELIN Young Chef Award – Chef Francis Lacson, Digámo (Marikina): A former seafarer whose modern and personal approach to Filipino cuisine demonstrates exceptional talent and a strong sense of cultural identity.
- MICHELIN Service Award – Clyde Joshua Zafra, Tito Boy (Pampanga): Recognized for leading his young team with thoughtful recommendations, confidence, and genuine warmth.
- MICHELIN Exceptional Cocktails Award – Ron Job Sanchez, Automat (Makati): Honored for his creative cocktail programme, which incorporates fermentation, infusion, clarification, house-made herbal oils, and fat-washing techniques.
Mindful Voices Highlights Sustainable Gastronomy
The 2027 edition also introduces Mindful Voices in the Philippines, an editorial platform that brings together chefs, hoteliers, and winemakers to share their experiences and forward-thinking practices across the hospitality industry.
The first recipient recognized at the ceremony was Chef José Luis “Chele” González of Gallery by Chele in Taguig, whose approach demonstrates how culinary excellence can go hand in hand with environmental responsibility.
Approximately 90% of the restaurant’s ingredients are locally sourced through partnerships with farmers, fisherfolk, and Indigenous communities. Its sustainability initiatives include an urban garden nourished by composted kitchen waste, programmes that create added value for cacao, coconut, and rice, and collaboration with the International Rice Research Institute (IRRI) to preserve and promote heirloom rice varieties.
Through these efforts, Chef Chele highlights the role restaurants can play in supporting local livelihoods, preserving culinary heritage, and building a more thoughtful food ecosystem.
With 127 establishments recognized across its different categories, the MICHELIN Guide Manila and Environs & Cebu 2027 reflects a Philippine dining scene that continues to develop while embracing its cultural roots. From internationally recognized fine dining to accessible neighborhood restaurants, this year’s selection celebrates the people, ingredients, and traditions shaping the country’s evolving gastronomic identity.
The complete restaurant selection is available through the MICHELIN Guide website and app, where diners can explore establishments by location, cuisine, and other features.
