Belmont Hotel Manila recently unveiled the third edition of Pamana, its culinary initiative honoring Filipino food heritage through heirloom recipes, regional flavors, and stories passed down through generations. The launch took place during an intimate media gathering at Café Belmont, showcasing the hotel’s commitment to cultural preservation and sustainable dining.
This edition of Pamana highlighted the rich flavors of Panay Island, with a focus on Ilonggo cuisine, expertly prepared by Belmont Hotel Manila’s Executive Chef Dan Jason Acido alongside guest chef Rey Parreño II, a passionate advocate of traditional and contemporary Ilonggo dishes. Guests were treated to heritage-rich favorites including Bordon Mechado, a slow-cooked beef dish infused with regional flavors; Piangang Manok, a Mindanaoan chicken specialty with burnt coconut and spices; and Inadobadong Apahap, a refined adobo featuring locally sourced Asian sea bass.

“These dishes represent different regions, memories, and cooking traditions from across the Philippines,” said Chef Rey Parreño II. “By sharing these recipes, we hope to honor the people and stories behind them and keep them alive for future generations.”
Guests can continue enjoying Chef Parreño’s creations through the Pamana Weekend Dinner Buffet at Café Belmont, held every Friday and Saturday from 6:30 PM to 9:30 PM for PHP 1,700.
