Lys, a new fine-dining destination at The Reverie Saigon, will open on October 15, marking the international debut of Hong Kong-based ZS Hospitality. Led by Chef Fabiana Miccoli, the restaurant brings together refined French techniques, Italian warmth, and Vietnam’s vibrant local ingredients in a dining experience shaped by personal stories, seasonal produce, and contemporary elegance.
Named after the French word for lily and inspired by Chef Fabiana’s grandmother, Lydia, Lys reflects a family legacy of hospitality. The opening also marks a milestone for ZS Hospitality as it celebrates its 10th anniversary, expanding its culinary vision beyond Hong Kong, where its restaurant Feuille has established the group’s identity.
Chef Fabiana brings experience from acclaimed kitchens, including L’Atelier de Joël Robuchon, where she secured two MICHELIN stars in 2026, and the two-MICHELIN-starred Beau-Rivage Palace in Lausanne, Switzerland, where she worked with Anne-Sophie Pic. At Lys, her precise French foundations meet Italian sensibility and Vietnam’s aromatic herbs and native produce.
A Refined Menu Inspired By Three Culinary Traditions
The dining experience begins at the pre-dining bar with aperitifs and cocktails featuring local ingredients before moving into a menu built around seasonality, texture, and thoughtful combinations of flavor.
Highlights include LYS Butter, a blend of cultured French butter and Vietnamese fermented tofu served with artisanal rye bread, dried lily flowers, and southern Italian olive oil. The Kampachi pairs watermelon radish with Vietnamese balm and Beurre Nantais sauce, while Onion reinterprets French onion soup through Italian pasta, Vietnamese hành nén, aged Gruyère, and thyme.
For the cheese course, Brie de Meaux is wrapped in a delicate crêpe and flambéed tableside, accompanied by salted-butter sauce with tamarind and chili. The combination draws inspiration from Vietnam’s familiar pairing of tart tamarind and spicy chili salt.
The beverage program complements the menu with two wine-pairing options: Discovery, priced from VND 1,200,000++ to VND 2,000,000++ for four to eight glasses, and Prestige, from VND 2,200,000++ to VND 4,200,000++ for four to eight glasses. Non-alcoholic options include seasonal house-fermented drinks made with local produce and a tableside tea service featuring Golden Camellia, a rare Vietnamese botanical infusion.
An Elegant Sanctuary With A Personal Story
Inspired by Art Nouveau and the flowing contours of a lily, Lys’s interiors reinterpret European restraint through Vietnamese craftsmanship. Cream, coral, and deep burgundy tones complement expressive marble, dark timber, translucent fabrics, and petal-inspired details. Bespoke ceramics and tailored uniforms developed with local artisans further connect the restaurant’s contemporary aesthetic with local heritage.
Beyond its culinary ambitions, Lys is committed to supporting the next generation of female culinary leaders. ZS Hospitality Chair Elizabeth Chu describes the opening as a personal homecoming to Ho Chi Minh City, where her story began, and an opportunity to champion female talent alongside Chef Fabiana.
Lys will welcome guests for dinner from Monday to Saturday, 6 PM to 11 PM, with the last seating at 8:30 PM. Guests can choose from three menus: the four-course The Seed at VND 3,200,000++, the six-course The Bud at VND 3,800,000++, and the eight-course The Bloom at VND 4,500,000++.
