Cantonese fine dining reaches new heights at Lai Ching Heen in Regent Hong Kong, recently recognized among the LA LISTE World’s Best Restaurants in Greater China. With an outstanding score above 90, it is one of just 11 restaurants in Hong Kong to earn this distinction.

Since its founding in 2015, Lai Ching Heen has become a global ambassador for refined Cantonese cuisine, blending rich heritage with modern flair. Executive Chef Yiu-Fai Lau and Head Chef Man-Sang Cheng lead the kitchen with decades of collaboration, emphasizing craftsmanship, consistency, and innovation. “A good chef must first demand excellence of themselves before expecting it from others,” says Chef Lau. He adds that while technology aids the kitchen, many techniques—like hand-chopping fish for perfect texture—remain rooted in tradition.

Lai Ching Heen stays true to Cantonese principles while embracing creativity. The restaurant’s Peking Duck, inspired by a Japanese culinary trip, reinvents the classic with fanned crispy skin, delicate flour wrappers, and refreshing toppings of pineapple, green papaya, and cucumber juliennes, delighting guests since its debut.

The duo also focuses on passing Cantonese cuisine to a younger audience. From precise temperature control to meticulously tested flavor profiles, every dish reflects care, tradition, and aesthetic presentation. Chef Cheng ensures the kitchen runs smoothly while maintaining pristine quality, working closely with Chef Lau to refine both classic and new dishes through collaborative trials.

Accolades, including two Michelin stars and China’s Black Pearl ratings, celebrate not just the chefs, but the entire team’s dedication. As Chef Lau notes, “Awards are not for individuals—they honor a galaxy of stars shining together through every dish.”
