This July, Waterside at Solaire Resort Entertainment City takes diners on a culinary journey across the Iberian Peninsula, showcasing the rich flavors and traditions of Spain and Portugal as part of its ongoing Eat Around the World dining series.
Inspired by the coastal cultures of Southwestern Europe, the limited-time menu highlights the fresh ingredients, rustic recipes, and communal dining traditions that have defined Spanish and Portuguese cuisine for generations.
Guests can begin the experience with Pulpo a la Gallega, Galicia’s signature octopus dish served with crisp potatoes, aioli, and paprika, before sampling a selection of classic Spanish tapas and hearty puchero. Portuguese specialties also take center stage, including flame-grilled Piri-Piri Chicken, Leitão no Forno or slow-roasted suckling pig, and Cataplana, a fragrant seafood stew traditionally cooked in a clam-shaped copper vessel.
One of the highlights of the promotion is Waterside’s interactive dining concept, where guests can customize their own Iberian-inspired meal. Diners can choose between Spain’s signature rice, known for its firmer texture, or Portugal’s softer and creamier style, paired with premium meats or fresh seafood.
Among the featured specialties are Paella de Chuletón, made with premium cuts of beef, and Arroz de Mariscos, Portugal’s seafood rice simmered in a rich tomato-based broth.
Dessert completes the culinary journey with two beloved Iberian classics. Spain’s Crema Catalana features a smooth citrus-infused custard topped with freshly caramelized sugar, while Portugal’s iconic Pastel de Nata offers flaky pastry filled with creamy custard and finished with a dusting of cinnamon and sugar.
Beyond the dining experience, Waterside continues its Eat Around the World Passport program, allowing guests to collect stamps for every featured destination they visit throughout the year. Completed passports qualify diners for the year-end grand raffle featuring exclusive dining, leisure, and luxury prizes.
Adding to the festive atmosphere, Waterside will also host live FIFA World Cup™ screenings during the tournament’s final weeks, giving guests the opportunity to enjoy premium food and drinks while watching football’s biggest matches.
