InterContinental Phuket Resort by IHG introduces Sipping Tiger, an intimate cocktail bar celebrating Thai wilderness, local botanicals, and sustainable craft. The bar is led by Thai beverage experts Alif Abru (Head of Beverages) and Kunawut (Kim) Wongruen (Bar Manager), who bring precision, creativity, and an instinctive approach to cocktails rooted in Thailand’s rich natural heritage.

Nestled within lush greenery and warm, tactile interiors, Sipping Tiger is designed as a modern hideaway where guests can unwind and immerse themselves in a botanical-forward drinking experience. The bar features three distinct areas:

  • The Bar Counter: A rattan-framed, cocoon-like space for guests to watch mixologists in action.

  • The Den: A private 12-seater for intimate gatherings, with its own illuminated bar and curated fine spirits.

  • The Botanical Room: A working herb garden with Thai basil, cilantro, lemon verbena, thyme, and more, directly used in cocktails to highlight local flavors.

Crafting Cocktails with Purpose

Sipping Tiger’s beverage program reflects a commitment to sustainability, zero-waste practices, and locally sourced ingredients. The team collaborates with Kasetsart University, Chulalongkorn University, and local growers such as Katian Farm, alongside WWF Thailand, to champion environmental stewardship and responsible sourcing.

“Zero-waste isn’t a trend for us, it’s our way of appreciating what Thailand gives us,” says Kim Wongruen. “Our role is to transform ingredients with care, letting their flavors and character shine through every drink.”

A Menu Rooted in Thai Botanicals

The cocktail menu includes 10 signature drinks designed to pace the evening from light refreshers to contemplative, spirit-forward serves:

  • Calamansi Riposato (490 Baht): Aperitivo-style cocktail with calamansi, tangerine ice, cinnamon, peach sherbet, bianco vermouth, and vodka.

  • Rum Cartel (490 Baht): Mojito-inspired mix of homegrown chocolate mint, cucumber, passion fruit honey, and Campari.

  • Shiro (590 Baht): Crisp highball with chrysanthemum, Indian borage gin, yuzu sake, and lemon honey.

  • Smoke & Summer (590 Baht): Mezcal Paloma with fermented local pineapple agave, grapefruit soda, and pink lime salt.

  • Den It Again (590 Baht): Aged local agricole rum layered with guava, five spice, and fortified wine.

  • Dessert Island (550 Baht): Pandan-aged rum, Silver Needle tea, and upcycled coffee liqueur for a Southeast Asian dessert-inspired close.

Zero-proof options include Watermelon Splash (390 Baht) and Skinny Mango (370 Baht), offering non-alcoholic, produce-forward experiences without compromise.

Sipping Tiger also offers bespoke classic cocktails, a curated wine selection, Thai craft beers, non-alcoholic beverages, and complementary bar bites.
