This September, Finestra at Solaire Resort Entertainment City invites wine enthusiasts and food lovers to an intimate evening of Tuscan elegance featuring Castello Banfi, one of Italy’s renowned wine producers.
Set against sweeping sunset views of Manila Bay, the experience will begin with a cocktail reception before leading into a carefully curated six-course dinner designed to complement Banfi’s celebrated wines. The dinner will take place on September 12 at Finestra.
Chef Andrea Spagoni leads the culinary experience, presenting contemporary Italian cuisine rooted in authenticity, seasonality, and refined simplicity. Meanwhile, Director of Beverage Daniel Blais curates the wine pairings, bringing together expressions from Montalcino, Bolgheri, and other parts of Tuscany.
The evening begins with canapés paired with Pinot Grigio “Le Rime” and Centine Rosso. The six-course menu then features smoked Hokkaido scallop with black truffle alongside Rosso di Montalcino 2022, followed by guinea fowl and saffron sauce paired with Cum Laude “en Magnum” 2022.
For the pasta course, handcrafted Tortello Versiliese is matched with Aska “Super Tuscan” 2023, while herb-roasted Chilean seabass is paired with Brunello di Montalcino 2019. The main course of pan-fried US beef tenderloin comes with Summus “Super Tuscan” 2018, followed by a raspberry tarte with yoghurt and lime zest.
At the heart of the evening is Castello Banfi’s Tuscan heritage. Located across a 2,830-hectare estate shaped by the Orcia and Ombrone rivers, Banfi is known for combining traditional winemaking with modern innovation, particularly through its celebrated Brunello di Montalcino.
More than a wine dinner, the experience brings together Tuscan terroir, contemporary Italian cuisine, and luxury hospitality for an evening of discovery and conviviality.
