This season, Finestra at Solaire Resort Entertainment City takes diners on a culinary journey through Italy’s islands with Isole, the latest chapter in its year-long A Taste Across Italy series.
Curated by Finestra’s Italian chef Andrea Spagoni, the three-course sharing experience celebrates the flavors of Sicily and Sardinia, bringing beloved regional and street food traditions to the table through refined techniques and contemporary presentation.
A Taste of the Islands
The experience begins with a trio of antipasti inspired by the vibrant coastal character of southern Italy.
Delicate amberjack carpaccio is served with fennel and pine nuts, while the classic caponata is reimagined on crispy toast with king red prawn and spicy jam. Completing the selection is panelle, the traditional chickpea fritter often enjoyed as a street food favorite, paired with parsley emulsion and fried capers.
At the center of the experience is artisanal fregola with clams, a handcrafted pasta specialty that reflects the islands’ deep connection to the sea. Briny seafood flavors are enhanced by the savory richness of bottarga, creating a dish that celebrates the simplicity of island cooking.
The main course continues the journey inland with wood-fired roasted lamb rack and pork belly, paying tribute to Italy’s pastoral traditions. Seasonal fava beans and zucchini salad accompany the meats, adding freshness and highlighting the rustic character of the cuisine.
A Sweet Finish
Dessert pays homage to seadas, a rustic pastry traditionally associated with Sardinian pastoral communities, where sheep’s milk cheese and honey have long been staples.
Finestra presents its own refined interpretation with pecorino mousse and honey glaze, creating a delicate balance between sweet and savory flavors while preserving the essence of the traditional dessert.
